Plant-based Mac & Cheese
Vegan, dairy-free, gluten-free, grain-free
- 1 box Chickpea pasta (I used Banza)
- 1/2 cup Cooked butternut squash
- 1/2 cup Raw cashews, soaked
- 6 tbsp Reserved pasta water (from cooking!)
- 2 tsp Avocado oil (I love Chosen Foods)
- 2 tsp Nutritional yeast
- 1/2 tsp Mustard
- 1/2 tsp Apple cider vinegar
- 1 clove garlic
- Salt and pepper to taste
- Microgreens (optional for garnish)
- Chili flakes (optional)
Cook pasta according to box instructions. Drain and reserve 6 tbsp of the pasta water.
Combine all sauce ingredients in a high speed blender. Blend on high until smooth.
Combine sauce with pasta and add garnishes if desired.
