Plant-based Mac & Cheese Recipe

Plant-based Mac & Cheese

Vegan, dairy-free, gluten-free, grain-free
Servings 4 Servings

Ingredients
  

  • 1 box Chickpea pasta (I used Banza)
  • 1/2 cup Cooked butternut squash
  • 1/2 cup Raw cashews, soaked
  • 6 tbsp Reserved pasta water (from cooking!)
  • 2 tsp Avocado oil (I love Chosen Foods)
  • 2 tsp Nutritional yeast
  • 1/2 tsp Mustard
  • 1/2 tsp Apple cider vinegar
  • 1 clove garlic
  • Salt and pepper to taste
  • Microgreens (optional for garnish)
  • Chili flakes (optional)

Instructions
 

  • Cook pasta according to box instructions. Drain and reserve 6 tbsp of the pasta water.
  • Combine all sauce ingredients in a high speed blender. Blend on high until smooth.
  • Combine sauce with pasta and add garnishes if desired.
